Colombia’s Cauca region is renowned for producing some of the country’s most distinctive coffees, and San Sebastián is a shining example. Nestled in the highlands of southwestern Colombia, between the Andes and the Pacific coast, Cauca sits at elevations of 1,600–2,000 meters. Its volcanic soils, abundant rainfall, and dramatic day-to-night temperature swings create ideal conditions for slow cherry maturation, resulting in exceptional sweetness and complexity.
Sourced through our partners Cofinet, San Sebastián is a regional selection produced by smallholder growers in the Inzá municipality, part of the Tierradentro region on Cauca’s western slopes. Around 80% of the population here belongs to the indigenous Paez community, who have cultivated coffee for generations on small farms averaging just 0.5–1.5 hectares. Farmers primarily grow Castillo and Caturra varieties, carefully harvesting ripe cherries and delivering them to local wet mills. There, the washed process brings out the clarity and vibrant character that defines the cup.
We roast San Sebastián with versatility in mind—an omni-roast developed to shine as both espresso and filter. The result highlights the classic Colombian profile that coffee lovers around the world cherish. Expect a lively candied orange acidity, balanced by layers of sweet caramel and a smooth milk-chocolate body. A subtle hint of nutmeg lingers in the finish, adding warmth and depth.
