Exquisitely crafted by the renowned experimental farmer Jairo Arcila at La Pradera farm in Quindío, Colombia, this coffee reflects the innovation and artistry that Arcila farms are celebrated for. Known for their exceptional microlots and consistently outstanding cupping scores, the Arcila family continues to push boundaries with their unique fruit maceration techniques.
This lot was grown at La Pradera and underwent a 72-hour dry anaerobic fermentation with the pulp on, during which passion fruit was added. After fermentation, the cherries were pulped and dried on raised beds, with layers of fresh passion fruit placed among the coffee until the ideal moisture level was achieved. This meticulous process infuses the coffee with remarkable complexity and vibrant character.
The result is a cup that offers a tantalizing interplay of sweetness and acidity, with intense tropical flavor notes of mango and passion fruit. A truly captivating expression of Colombian innovation in coffee.
