Grown in the highlands of Quindío, in the municipality of Circasia, La Divisa by Polimata represents a refined expression of Colombia’s classic washed profile. This lot benefits from the region’s ideal combination of altitude, volcanic soils, and stable climate, allowing for slow cherry maturation and the development of complex sugars within the coffee.
Processed using a fully washed method, the coffee undergoes careful fermentation followed by thorough washing and controlled drying. This approach enhances clarity in the cup, resulting in a clean and structured flavor profile that highlights both the intrinsic qualities of the variety and the precision of processing.
In the cup, La Divisa opens with bright citrus notes—reminiscent of orange and tangerine—balanced by a soft malic acidity akin to green apple. As it cools, layers of caramel and panela sweetness emerge, complemented by delicate notes of peach and apricot. The body is smooth and silky, carrying a crisp, refreshing finish with subtle floral undertones.
This coffee is an excellent representation of modern Colombian washed coffees—balanced, expressive, and versatile—making it equally suited for both filter brewing and lighter espresso profiles.
