Sitting at elevations between 1,600–2,000 meters above sea level, Gaitania offers the perfect combination of volcanic soils, cool mountain climate, and traditional farming knowledge that bring out vibrant clarity in the cup.
This coffee is crafted from the Castillo variety, known for its resilience and clean profile, and is processed using a carefully managed natural method. After selective handpicking of ripe cherries, the coffee is sun-dried under controlled conditions to encourage fruit-driven complexity while maintaining balance. The result is a cup that reflects both innovation in processing and the authenticity of Tolima’s coffee heritage.
In the cup, expect a lively and refreshing sensory experience: bright green apple and zesty lime notes create sparkling acidity, while a grounding layer of cacao rounds out the profile with smooth depth.
