This exceptional Pink Bourbon Natural comes from Hacienda Cafetera Santa María, a women-led coffee project located in Aratoca, Santander, high in Colombia’s Andean Cordillera at 1,700–1,900 masl. Produced by Mildred Muñoz and her team, the farm is dedicated to organic, shade-grown coffee cultivated within a complex agroforestry system, preserving biodiversity while enhancing cup quality.
Coffee cherries are hand-harvested at peak ripeness, carefully floated, and naturally fermented before undergoing an extended drying process that begins on raised pre-drying platforms and finishes slowly in greenhouse conditions. This meticulous natural process concentrates sugars and aromatics, resulting in a vibrant and expressive cup.
Hacienda Santa María uses ancestral and organic farming methods, relying on compost, biochar, coffee husks, and natural fertilizers while avoiding synthetic chemicals entirely. Shade canopies are actively managed, soils are regenerated between harvests, and every lot is inspected repeatedly throughout the season to ensure optimal quality and traceability.
This microlot is sourced through our partners Belco, who work closely with producers to support sustainability, transparency, and long-term quality at origin.
