To start, Gaggia ditched the pressure stat and upgraded to a PID for boiler temperature regulation, meaning you get much more stable and accurate brew temperatures—this feature is practically unheard of on machines of this price point.

Speaking of features generally reserved for machines two to three times as expensive, the Espresso Evolution also features an automatic pre-infusion that gently wets your grounds to allow for degassing and reduce the likelihood of channeling. It also allows you to program volumetric extractions with ease, so once you’ve dialed in you don’t need to weigh your shots.

This is also an extraordinarily versatile machine: it comes with everything you need to brew using ESE pods, store-bought pre-ground coffee, or freshly ground beans from your own grinder.

Round that out with a removable stainless steel drip tray for additional cup clearance, an ergonomic portafilter that lies flat for easy tamping, and a no-skills-required pannarello steam wand and you’ve got yourself the perfect starter espresso machine.
