Jairo Arcila is a third generation coffee grower in Quindio, Colombia. Married to Luz Helena Salazar they had two children together: Carlos and Felipe Arcila, the co-founders of Cofinet. Jairo’s first job was at Colombia’s second-largest exporter as their Mill Manager. And continued to work there for over 40 years until his retirement in 2019. This coffee was grown by Jairo arcila at the farm La Pradera.
This lot was exposed to a dry anaerobic fermentation of 48 hours. During this fermentation period, dehydrated mandarin skin was added to the anaerobic environment. The coffee was then gently washed and placed on raised beds mixed with dehydrated mandarin skin below 35ºC until ideal moisture content was achieved. This microlot is 100% Caturra.
